This CHORIZO is Short Creek Farm's take on the Spanish standby. Brick red and redolent of wood smoke, what lies at the heart of a great chorizo is pimentón de la Vera, the renowned smoked paprika from western Spain. Short Creek combines heaps of pimentón with garlic and oregano to yield a salame that is not shy on flavor. Enjoy anywhere a classic Spanish-style chorizo is called for: in a tortilla, in paella, or with steamed mussels or clams.
